I don't know what their most popular IPA is. I have had a few beers from Evil Twin, but nothing stands out as something I would recognize on tap at any place I've seen taps. So, I can only go by what I think the best beer I've had from them is. Honestly, most of their beers have been stinkers, but the Problem Solver was really good.
The quite hazy, orange beer produces a head that isn't clumpy, but it's quite sticky. There will be copious lacing left as the head goes down, but I don't know that it will be the thing that sticks in my head about this. The aroma is a very nicely sweet orange and grapefruit, and I want the taste to follow this smell quite directly.
First sip is pretty damn spectacular. It has the orange and grapefruit, but they are subtle and nearly silent. Carbonation isn't really an issue, so the whole beverage comes off as firm, yet sedate.
Tip-in is a biscuit malt, some noteworthy yeast, and orange rinds with no carbonation to speak of. The middle rolls in with grapefruit to join the mix, and the whole mouthfeel becomes a joyous mix of all the ingredients with a spice of carbonation sizzling above them. The finish is a bitter bend as the fruits decide that they don't need to be as boisterous, and they hang on for the trail off.
