I've said before that I'm not sure how to deal with a brewery that seems like it's all over the place. It's kind of a "throw spaghetti at the wall" approach, and I guess at least there are some hits. I guess, as long as it is leading to a refinement of the process and the result is a steady improvement of the beer, I'm going to support it. No one likes spending money on bad beer, but it's a risk some of us take.
There are days when you want complexity, and there are days you want simple. Today, I could actually go for either. I'd like something simple, so I don't have to think as much as I did for the first part of the day. Also, a complex beer might give me something to think about aside from work. I don't know that I've developed an idea of what I might like about cashmere hops that I see are in this beer. Let's develop one.
First sip is not the "notes of lime, berry, and lemon" I was promised on the label. There is a lot of floral going on, and I'm not sure if it's the yeast or the hops, but something is musty. I can't say I'm an immediate fan of this beer, and the consequence is that I am going to potentially look askance at any beer with cashmere hops in the future.
Tip-in is bitter, moderate carbonation, and gentle lemons; it's not a great start. The middle is where I expect greatness, and I find heightened carbonation, a dulling of the bitterness and most flavor, and it's still not great. The finish is where the flavors of lime and lemon sit. If there are berries, I don't know where they are. But a bitter must heads to the trail off.
