The dark brown, rusty beer sports quite a significant head. In fact, I waited a while before taking the picture that you see here, but I became impatient by the end. So, I just took the picture after topping it off. The off-white head is a rocky mixture of big, medium, and teeny tiny little bubbles. There's a little bit of lacing going on, but there's not a ton. The aroma is, like the one that came before it, absolutely delightful. It sports the distinct Belgian yeast on top of a rich Belgian malt that has cocoa, dark fruits, and a pinch of chocolate. This is going to be good.First sip is disappointing. I'm just kidding! This thing is fantastic. I can totally see sipping this all day, as the thick Belgian malt of bread and earth hosts a delightful mixture of dark fruits, chocolate, mocha, and some seared sugar. The sip really makes me wonder if I should even try gulping, because I don't want to lose what is starting off as a home run of the beer. But, gulping is part of the process.
Tip-in is all over carbonation dazzle with yeast and brown sugar mixing together in an earth and coffe-bread bowl. The middle meanders in with the carbonation not giving an inch while a delightfully smooth mixture of dark fruits, mocha, brown sugar, yeast, earth, and may be a few nuts absolutely takes over the mouth, and they are all greeted as liberators. The finish is a flash of carbonation followed by chocolate and earth covered cherries with some vanilla sprinkled on top.
Bottom Line: One of the best beers I've ever had.
